The darkest malt. Roasted at up to 235°C.
Characteristics
Enhances the aroma of character beers by lending a more tart flavour to beers than other coloured malts. Imparts a slight burnt or smoky flavour.
Usage
Dark-coloured beers, stouts and porters. Up to 3% of the mix; up to 6% for stouts.
Storage
Malt should be stored in a clean, cool (< 22°C) and dry (< 35% RH) area.
